First thing I will say, this site can definitely be a winner! Almost two years since creation and not hit by a single Google update, that speaks for itself and I think you should kick it up a gear or five.
Let me ask you, how many categories do you have? With this small amount of posts I think you are spreading a bit too thin early on. Sure, KGR keywords can easily rank but I also think topical authority is important. You mentioned you want to have 6 posts per category before you reapply to AdSense, which is a decent goal. My suggestion would be to commit yourself to getting each category to 10 posts as soon as possible (one full page of posts, doesn't look as thin as having 6 posts).
Once you have 10 posts per category, try to get each category one by one to 30+ posts.

Yeah, the site is purely white hat. No links built, no AI, just content researched and written by myself.
I have around 8 I think - I know I overdid it, but I’m slowly filling them out!
I’ll definitely try to get as many post in each category as possible.
Hoping that I can start earning off it sooner rather than later, your journey gives me motivation to push forward!

That's clicks from GSC? Do you track your visitors with analytics as well? My sites often get a lot more visitors than what GSC says.

Yes, not massive numbers but it's not a massive site. Just over 30 articles so far with still no link building whatsoever.
It took me a long time to get Adsense enabled but I'm happy to report I managed it and now Ezoic is live on the site!
