I don't think you should quit your job man. I did the same and it ended up biting me in the ass.
YouTube is very volatile and the chance of the algorithm picking you up is close to zero.
Do it as a side project.

You should first get your youtube channel off the ground and when you're earning around the same as you are from your job then you should think about quiting. Youtube is unpredictable, requires a lot of dedication and some luck. I have friends who quit their jobs to do youtube and most of them never even made more than $100. One of my friends semi made it, his channel blew up when fortnite was at it's peak, he has 200k subscribers but nowadays is getting 1k-4k views on his videos.

This ain't no lie I've been posting videos religiously every single day for 2 whole years 26 months to be exact and while my income, subscribers and views are increasing it is doing so at a snails pace.
Yes as others have said youtube is hard, very hard. Very very very hard im sure at one point in time it was much easier.
I will say this though once I hit the 2 year mark which wasn't long ago youtube started showing me some love when it comes to views.
In a sense I really don't care about subscribers but they seem to come a lot easier than views. Youtube act like they're paying you money when it comes to views. Lol I guess in a sense they are though hence it's why they hold back on them.
I was actually fired from my full time job of 2.5 years the other day on May 16th, while I was on vacation. I had it made because I was only working 3 days per week with a 60k per year income.

I wouldn't quit your job until you are making more money on YT than your job pays...nothing wrong with keeping your job and starting a YT channel as well. You dont have to post a new video every single day. To be frank, its an incredibly competitive and saturated market (talking about YT) and achieving success will take a tremendous amount of work and luck.
Dont quite youir job just yet. I am into YouTube and I know how it works.
