If I am not mistaken there was an update last month, hundreds of reviews from other sellers in Italy were removed but mine remained sticky.

the update mostly wiped out reviews posted 6-9 months ago. Majority of the new ones were not removed(yet) so from my experience google can always catch up

hi Jacopo i'm italian too, i have the same problem with reviews, i can't do them anymore. I have never bought old accounts but I always created new accounts and I was able to put reviews, now I can't anymore!
I've always used: proxy, VPN, temporary phone numbers, clean cache every time.
I don't know how to do it anymore ... other methods?
possiamo parlarne in italiano da qualche parte?

No one will tell you how it works as long as it is traded.
Either you find out yourself or you buy from a dealer.
