Good question! I will surely consider adding this, thank you. But in fact, I can actually answer it briefly here as well:
Your payment gateway will truly depend on the country you live in, and what payment providers do they have. In most cases, Stripe will be available. Now, if you cannot have Stripe, what I was doing previously (before Stripe was introduced in Lithuania), I have created my own US LLC and had all the necessary info needed for Stripe to open an account even if I live in a country where Stripe is not supported. That would be a good thing to check as of right now as to how Stripe has changed but I suppose you should be able to do that. Once you create your Stripe account, you can assign it to, let's say, TransferWise, and have your money flow into this bank account.
All in all, I like Paypal. I think it's 100% necessary to have it in your store since customers in the US love paying via Paypal.
