I'll be taking some time off for a bit but wanted to wish you all a Merry Christmas and to show you want a real Antipasto Salad should look like.
4 kinds of cheese, 3 kinds of salami, grape tomatoes, black and green olives, artichokes, roasted red peppers, chopped onions, romaine lettuce, olive oil, red vinegar, dijon mustard, salt, and pepper.
Chop up the romaine lettuce, cut the tomatoes in half and everything else in very small pieces, mix it up well, pour the dressing over it, mix again and let sit for an hour so everything can get a little flavor of everything else.
It will take a minute to do all the work and you have to give some of it to the dogs as they sit right at your feet and you have to ask your wife to leave her kitchen so you can work but it rocks.
Serve it with flatbread, thinly sliced Italian bread or even crackers and you are well past heaven.
Even my Mother would be proud.
