Yes, to have different versions of PHP for diff sites you will have to edit Apache's config file from within the panel by adding one extra string to indicate the exact version to be used. And obviously you will have to install the 2nd version manually, since Vesta installs only one single version by default.

Cpanels are drag on the server, u don't need a control panel, cut it out, go for nginx, php 7.3 & mariadb along with cloudflare (plus UFW and fail2ban included). If u need a write up I can do that for you with clear steps - no charges. Happy Thanksgiving!!

This is the stupidest suggestion one could make. Why waste your time manually configuring everything? Have you ever tried setting up email infrastructure manually (exim and dovecot for instance)? Do you know how time consuming it is? That's what panels are for, no need to reinvent the feel, dude. One should focus on the business, not stupid servers or things like that. Computers should serve humans, not vice versa.
