You can see the trends for past year and decide based on that. For instance, in my country, music and entertainment were top categories for 2018.

But honestly, just going for what is trending and basing it on what niche to start is really tiring.
Just do something you know and excel in that. I have tried going after a trending thing, I had to learn everything from scratch and in the end it didn't even work out as expected. Due to my knowledge own lack of in depth knowledge of the subject.

here is my tip: just go to https://trends.google.com/trends/trendingsearches/realtime?geo=US&category=all
the idea is to look for a trending search on google trends that you can come with some content for it (non-copyright content), best if this done for local search terms, stream a non-copyrighted content about that, with all the SEO, and boost it with live-audience, if it works for you it will rank so good that after the livestream is over it will continue to get organic traffic, that will build your channel (subs/watch-time)
*remember to use ONLY non-copyright content

The best topic to get more views is always the latest trend. Today it may be Belle Delphine selling her bath water. Next week is something different. Just experiment and do what you love. It takes a while to build up a channel so you might as well enjoy it.

Hacks. Hack channels have always worked and will continue to work. It is an evergreen niche. If you don't know hacks, try proving/disproving popular hacks, shown in popular channels like 5 minute hacks. If you look at viral video trends, you'll almost always find a few hack videos (or reaction on hack videos) in the top 50. Safe bet.
Going by your name, I assume you are a fellow Indian....that cuts out one niche from your choices. You can't tap into the 'India reaction' niche. Indians want foreigners reacting to their content, they don't like fellow Indian reactions....
