Is it dangerous for my SEO to change my permalink for my posts? I have about 20 articles up, and I am afraid of damaging my SEO by changing my permalink format to post name only and removing date from the url.

If you 301 redirect the old URL to the new one, it should not have a noticeable effect.

If this is a "very short-term" site which needs to stay under the radar of Google, then don't do it. Anything can happen.

If you are planning to own it for a while, then change the permalink and redirect old URLs to new ones, as several others have suggested.

If you plan to update it regularly, make sure to have the date of publication and the date when it was last updated included with the post. This way, the loss of date in the URL will not affect your updated and recent posts.
