It's very limited. I'm thinking of using a wordpress landing page theme that will also provide the count down timer. Any suggestions about which theme I should use?

Well, I would recommend a WP plugin named Instabuilder 2.0 it has all what you need and it's very easy to use. You can buy it for I think $77 or you could get it cheap on fiverr, if I had to recommend a seller I would name a guy called redblitz.
