How often do statistics on a key word change? I used ubersuggest and google key word planner but both show different CPC search volume difficulty etc. do the stats change? Is there a wrong or right?

Hello, I want to know maybe the data given on a specific keyword on google keyword planner is real , when it says its competition is low, those this means that I can easily rank with it (if i work with that keyword) or what does it mean , because i have been suffering to rank what google low...
