YouTube is heavily sporadic. I get what your saying, and when I first began I often fell for that false dichotomy.
Channels that "blow" up randomly without any indication, are the small pool of winners over the hundreds of thousands of channels that are stagnate.
You'll find occurances like that in niches such as you mentioned "Fortnite" "top 10s" "Try Not to Laugh" "Meme compilations" and what not.
Take it for what it is - unless the user IS using a "secret" promotion strategy. However, according to what you mentioned, and the niches you suggested, 4-7 months is more than enough time to have a single video go viral, and collect an obscene amount of subscribers and positive channel momentum.
