Just want to know your quick reaction on this i.e. can I convert youtube videos to text manually and then write blog post.

Will this comes under copyright ?

Yes you can audio to text. It will unique but need edit the result.

I think Just give credit text to the video source n we are okay.

Yes you can, this works and re-write/edit it for the better. If you want to give credit to the video owner, it would be good too.
