They are by no mean low competition, anything with high CPM will attract competition because of....well...money!

If you are going to show your face or create a consistency avatar choose niches with some sponsors interested and forget CPM/RPM

Finances, IT, AI, Food, beauty,... are niches that make more earnings by sponsors/affiliate links than for Adsense
 
Make content in crypto. Since many big exchanges run promotions on social media, RPM will be very high.
