Can someone share what is the difference between Post Title and SEO Title and how does it help in SEO and ranking pls ?

Yoast Plugin takes the Post Title and add the seperator automatically as default settings, which becomes your SEO title, so write a good Post Title as it will help in ranking in SERPs. Take care of writing a good meta description as well which may include your focus keyword that will help people to click on your link in the search result. Write a unique article of good length of minimum 500 words, 3000 words is best, which will help in ranking.

Post title = what you see internally in your wordpress site to identify a post and in your front end, what the users see when reading your post. Remember that this Post title is going to be generally the first H1 of your posts.
Yoast SEO title = what Yoast passes as meta title in the HTML (what actually Google see and shows on search results)
