Do I need to manually go into webmaster tools and keep updating my sitemap.xml file by uploading it each time my website gets new pages or posts? Or does it automatically does this? I have the sitemap xml plugin for wordpress.

No you have to resubmit everytime.

Google will crawl it automatically, the more important thing is that you keep the site map itself up to date - there are wirdpress plugins that will do this AND ping google when it changes. If you use static htmlDave site there are services like xml site map generator...

Better you add manually whenever you are creating new pages.

Try the Yoast plugin for Wordpress, it does everything Davids355 referred to.
