If I upload a video of me playing COD or playing FIFA or something and then boost it with like 100k HR views so it ranks pretty high. Then enable ads on it to make money? Is that legal/would that work?

Potentially if you make it interesting, and probably want some commentary on it too.

If you did that I'd also make sure that you boost your YT subs, because people who watch game walkthroughs and playthroughs tend to trust your opinion more as a gamer if you have plenty of subscribers.

Yes it will work. But you need to wait some time. A video that was boosted with fake views usually takes around 2-3 months to actually generate a lot of real views every day.
