Wordpress Navigation

I have looked online for how to create the navigation structure for a large worpess site but cannot find the answer.

Currently the navigation looks something like this (example of a cooking site). Omlette Recipes, Soup Recipes, Burger Recipes.
All of these are added to the top navigation as a category with drop down sub categories.

The problem I have is that, if someone clicks "Omlette Recipes" they are taken to a blank categories page. I would rather they were taken to a page with a list of all the sub categories e.g. "herb omlette recipes", "cheese omelette recipes" etc...

How can I go about making the main category in the navigation show the list of sub categories when it is clicked on?

Why dont you just create a specific page for each main category listing all the sub-categories?

How do I got about adding the sub-categories to the page?
