If I use the same plugin (like Editorial Calendar) on all my sites, is this a footprint? Can Google "see" the plugins that work in the backend?

If there's no sign of it in the HTML of your pages, then no. Not that I think Google penalizes certain types of plugins anyway.

You can change the name of the plugins by changing the file location, but you need to know what you are doing.

But they usually leave a footprint imo.

If you do not install any protection, software like Wpscan are able to detect every single plugin you use, even those disabled.
But I don't think google use this hacking software.

IMO, main thing is if you want lesser risk, you should randomize your plugins across all your sites.
