The hyphen adds another character to your word, so "key-word.com" isn't really an EMD but still partial "Key - Word" and does not carry the extra value "keyword.com" would.
If the EMD isn't available go with something like "Bestkeyword.com" or anything that sounds catchy like if the keyword is "Best Gas Grill For Summer" you could use "SummerGasGrills.com

I'd avoid hyphens in domain names these days. And I'm not convinced exact match is worth it either

Google will not hate it, but it will not carry any extra value like an EMD does and less than Partial because of the extra hyphen character(s). It also depends on competitor domain names.
Personally I use "SummerGasGrills.com" most of the time to avoid long and ugly domain names when EMD is not available, people overestimate the value that comes from EMD.
I got it. But I was confused because when I search in google, and WITH quotes for "some-thing", one of results is a domain name some-thing.com, and G make the keyword plus the hyphens in bold ( some-thing is in green bold in the search result), as if he recognize the hyphen as if it is in my keyword...

And what if my keyword is two words: "some thing" but something.com is not available. Do I choose something-online.com or somethingonline.com ? knowing that the keyword "some thing online" is not interesting, if it was interesting the choice is easy, just go to somethingonline.com like your advice

A domain with more than one dash is believed to be very likely to be spam. So it's better to avoid having dashes in the domain. Also, EMDs still matter and it can still rank but not like before. Prior to the update, EMDs worked like magic - Google gave a much boost even without having to build many quality links.
Whether your domain is an EMD or not, keep in mind that the most important factor is still the overall domain strength wherein those who rank on the top got higher quality links. Even if a site is an EMD, what leads to a better site is the quality of links.

I generally avoid using hypens in the domain name because of the SEO and harder transmission with mouth-to-mouth.. Would definitely go with version without them if you can get it..
