Which type of backlinks are they? Guest posts, profiles, or something else?
If they are contextual backlinks then they should be relevant to your niche.

It won't "hurt" your ranking but you need to do it right. If your website is about "dog training", it's absolutely no problem to get a backlink from a website in the business niche if there is an article like: What should I consider before taking my dog to the office?

If they are too many, it may hurt your ranking but if they are less than the backlinks on relevant sites, then they won't.

It is also good to make links from non-niche-relevant websites, as long as some of your links are from niche-relevant websites.

Yeah, if you back link profile is completely filled with unnatural link profile and may be you getting traffic from them for now but when google finds it you will get in trouble. You might have to disavow the complete list, its better to keep relevant link profile even get back link from category page in non-niche sites works.
