Why does google RE-ARRANGE my title?

Example my original title on my website is like:

#1 Plumber in Manthattan New York | Big Papa Plumber

BUT when i search for it on google, google displays is like

"Big Papa Plumber # 1 Plumber in Manhattan New York."

Any idea????? Thanks

Google has been modifying the organic title for a long time now. They initially started with modifying the page title based on the user's query.

However, in August last year, they confirmed an update to how they process titles. Including seeking out the page's H1 and getting rid of keyword stuffed pages.

so, is it a bad thing if google is re arranging my title?
 
Google is changing your title because they think it will help increase the click-through ratio of your results.
 
Yes, I have several websites where Google just rewrites homepage title in this disgusting way, from "Keyword | Website.com" into "Website.com: Keyword." It looks ugly and I don't think it has any positive impact. Yet, for whatever reason, Google just singles out my website, even though pretty much every other website in the SERP has the same title structure.

Their algorithm is determining what it thinks is best for your title.

It's their own way of combating keyword stuffing. Even now after the recent update, with some keywords you can find websites with clearly keyword stuffed content.
 
It's been happening for a while now. But it isn't something to worry about, you might have noticed that the CTR is now better when Google has changed the title. The most important thing in SEO and life, in general, is to not fix something that's not broken. If you feel like it's causing a traffic decline for your site, try fixing it. For now, I don't see any issue with this. :)
