Why do people have so many host accounts?

Depends what your doing - if your creating some sort of network you don't want all your eggs in one basket.
If they are just MNS sites, it doesn't matter so much, assuming you have a host with decent bandwidth allowance and so on.

In addition to this, many people have servers to run their blackhat programs on, their blackhat sites and after a while your sites may run slow if they get too big or there are too many on a server. If you're making money, the more servers the better really in terms of being able to link your sites together with intelligently planned linking schemes.
Yes. Upgrade the server specs as needed but no need for multiple accounts in different hosts.
If you use blackhat methods you usually want separate IP addresses for each "thing". If you have a link network or something all in the same IP address it will be a red flag for google. Also, other methods as well, if you only have 1 IP address and you're doing black hat stuff with it, it might get blocked / shitlisted.
But heads up, it's not enough to have different IP addresses. Imagine 2 IP adresses but the sites in the same data center, with the same company. DNS would resolve through the same server (same parent company) and it would be the same physical location. So you're always safer by completely separating black hat from white hat.

I have around 60 MNS blogs and i have 6 hosting accounts. Back in 2010 i used to host all these websites in 1 hosting account and 1 fine day the hosting had some problem and all the sites were down for almost 24hrs. All the earnings went down form $100 to $0 that day. Lesson learned ,Since then i m using 6 hosting accounts just to make sure this doesn't happen again. If 1 hosting goes down my other websites are still up.
