Why Choose White Hat SEO Over Black Hat SEO?

The main reason people opt for supposed Whitehat, is when they are a brick & mortor physical business (longevity a must).
You cant utilize churn and burn methods for a local business that's been in the family for decades. Risk of killing the site is too great, hence whitehat.
If you run an SAAS, Service, Digital Product etc etc, You'd be crazy not to adopt blackhat for results. As starting a new domain if things go wrong is not the end of the world.
Those are the key aspects to consider WH v BH.
P.S Also, 'whitehat' SEO is always at least a little grey anyway. If you're building links in any shape or form aside from directories/business listings - you're not doing Whitehat SEO - no matter how much you may try and convince yourself otherwise.

If we are being honest and even more realistic we'd come to the realization that this dichotomy does not exist or no longer exists.
Differentiating blackhat from whitehat using what's on this infographic would be somewhat in accurate as most of the things on there are no longer black hat seo but rather poor seo practices that won't work.
In my opinion, do what is needed to rank your website while not exposing said website to Google penalties. I said so because no matter what approach you decide to apply today, in no distant time your site may lose rank/positions to Reddit or other authority sites.
Long story short, choose a method that would rank your sites and make you money.

why do you say so? by what merit would call posting my links to quora / wikipedia / pr newswires / blogs / etc a blackhat tactic?

These are pretty legitimate tactics so I'm not saying don't do it. But creating links of any kind, for a site that you own, is already leaving WH, and entering grey territory. My point was only to highlight that many "whitehatters" are infact practicing tactics that Google would frown up (if they knew it was yourself creating those links).

There's no such thing as black hat or white hat. Just 256 shades of grey... Even most 'white hat' link building strategies are against Google's TCs.

One is more evergreen traffic that's lower traffic imo lot of times, while the other can get penalty slapped at any moment, while getting gushing traffic.

Sometimes one should go for blackhhat seo also as preference. Like if it is short term project, it might make more sense to go blackhat.
