Anyone have a reason why rankings should appear slightly different on mobile rather than desktop?

I mean, why should they be different?

I guess one answer is geographical and it depends if your mobile browser is localized or not right?

Just curious hence question

Maybe some sites aren't as mobile optimized and won't rank as high for mobile SERP?

Ah yes of course - if site not so mobile friendly then that would push it down

Of course it will happen if your site not optimized for Mobile devices. You can check your site performance on mobile devices from GSC mobile usability report.
To avoid these problems you should optimize your site for both mobile and desktop version

If you mean SERPs it could be that you're logged in to Gmail / Google on one device and not the other. Google tries to give tailored results based on search history, so try Incognito mode on both Desktop and Mobile and see if that makes any difference.

That's why you should make sure that your websites are mobile-friendly.

Because customers behave differently between mobile and desktop. Also, Google prefers mobile-friendly and fast loading websites on mobile.
