You do not want to attempt setting up a dual boot server (Linux & Windows), you will want to setup the machine to host virtual machines and then setup virtual machines as you desire. Using virtual machines allow you to setup your dedicated server once and avoid further OS reloads in the future as you change your mind or want to try new solutions.
There is no need to purchase a Windows VPS, your dedicated server is plenty powerful and handle numerous virtual machines without issue.
