Which layout is better? Full Page or Read More?

If you're talking about your index page, it would be a little huge and require tons of scrolling if all full posts were shown, right?
Have an SEO oriented and interesting snippet with a read more link.
On your individual post pages the entire article will show.

On any site that I have more than 3 posts for, I use exerpts. I believe there are plugins for it, I use flexsqueeze 1.5 theme and it has it built in.

I think it depends on the site, if you are going to have content added all the time then do the snippet / read more link. For a static site, use a fully optimized single page for your homepage.
I think it would be to overwhelming for the users to have it all on the homepage without any type of organization. I hate to say it, but google likes it when you cater to the users and not to them so much. I wonder, perhaps it would be better SEO wise to not do that. WIthout any reall A/B testing, its hard to draw a conclusion at this point.

I'm not sure where everyone got the idea that a "full single page layout" meant that every post on the site would be on the homepage, in total. It's exactly what it sounds like, a "single page". Anyway, to do post snippets on your homepage you should be able to set it under settings -> reading in wordpress without any additional plugins, unless your theme has broken that functionality.

From an SEO point of view I believe that having a decent chunk of content on your index page is better.
From a user's perspective you're probably better off using the "more" tag in wordpress or whatever your CMS has.
I don't have a set amount of posts for my index but I change it to try to have roughly 2 - 2.5k words visible. So either 4-5 500 words posts or a few more smaller ones.

It depends on your site and content added to it. But from my point of view I think read more option is better for SEO.

I have seen some "big dogs in the game" do this also. Its hard to tell that there are even other pages to the site, unless you use the previous/next at the top or bottom of the page.
When you use exerpts just use All in one SEO plugin. You can setup your keyword and description for the root, then on every post you can also set up your title, description, keywords and make sure to cover your h2/h3 tags along with other onpage SEO in each post.
