Well, I'm not sure what the least fee networks are. But I think accepting the most popular Cryptos is good enough.
As I know is possible to auto convert any received payment to usdc/usdt. This way you are covered.

I accept only the most popular cryptos, and as much as they fluctuate in value, I just keep them as they are, and HODL
But yeah, it's definitely a good idea for more security. Auto-convert any received crypto to a crypto that's stable.
How about just take any coin that you can convert to some of the top ones (BTC, ETH etc..).
Yeah, I guess I could. Don't auto-convert the ones that I would like to hold, and auto-convert everything else the moment I get it.
That way I can accept pretty much all cryptos the exchanges I use offer, with little risk.

So I also added Coinbase as a payment method on my site.
I shared a screenshot above of all the Cryptos I accept via Coinpayments, and here is what I take with Coinbase:
Coinbase offers many less cryptos to accept for payment than Coinpayments does, at least when using Coinbase Commerce, which is what I used.
