All legit exchanges legally require ID when dealing with fiat money.
You may be able to find exchanges that don't require ID, but they are not regulated, so it's not safe to use them.
Your best bet would be buying crypto directly from someone who is selling it.

If you do that, you won't be able to deposit or withdraw fiat money because your bank account name must match the name registered on the exchange.
Also, exchanges may request further proof of identity anytime, and even proof of residence or proof of income. If you can't provide them, they will close the account.
