I created a backlink on Monday, and Google crawled and indexed it on Saturday, which date google consider for this backlink to be made?
When does Google consider backlink to be made?

Technically from the moment it was indexed and checked by joining through. If you check your server logs you should see a incoming visit from Googlebot with referral, the site you placed that backlink. If so, it's done.

Obviously Saturday as it didn't know about the backlink till then.
