how important is the decision between brand new (with keyword) and expired (no relation) ? For example, if I want to target the keyword "how to make wine" would it be beneficial to get an expired domain that has no relation to wine making but has good metrics, or would it be better to get a brand new domain like howtomakewine.com since it has the keyword in the domain?
 
You can get both, develop your site on the new domain, and redirect the expired one to it if it has good metrics.
 
good idea, but what if only one is an option?
 
I would be going with the keyword rich domain and built it to perfection.. Ranking that would be better if we do the basics right.
 
Get your domain, check the backlink profile of the expired one to make sure it has no penalties/bad links etc, and then 301 the expired domain to yours.
 
For me, I'd go to expired domain because it allows you to rank faster if it has a good backlink profile and you can use any domain name as long as your content is relevant to your niche.
 
A "brand" is more than just a combination of words. If your business is local, consider including your city or state in your domain name to make it easy for local customers to find and remember.
 
If you're looking to rank quick then go with the expired domain. If its a long term project, you're prepared to be patient, and the keyword will help with branding then go with the new domain. Need to know a bit more about your plans/goals.
 
If you are only going for SEO I would go with the expired domain. If you want to try and build a brand, build and audience, social media, etc. I would go for the brand new name.
 
if you able to get expired authority domain then nothing is better than it.

Else get new one.
 
I suggest you to go for brand domain with which you can brand it better and create your own identity rather than wasting your time with this spammy domain.
 
First you have to ask yourself: Is this a niche I'm going to work with long-term? Or do I just want to earn some quick bucks, move over to a new niche that I enjoy?

If you want to earn quick money, I suggest going with the expired domain. But if you're planning to invest your effort into this niche, if this is your passion, then you should really consider establishing a brand website using the keyword.
 
I'd personally go with the expired domain if it had a good backlink profile.

Keywords in the domain do not work as good as they used to.
 
Get an aged domain with wine related backlink profile that wasn't penalized.
