What's the point of using offshore VPS?

Instead of using an offshore VPS, you can use an onshore VPS anonymously by using a fake email and connecting only with a VPN. This way they have no trace to you.
Or you can also use a VM with a VPN too, it pretty much does the same thing as a VPS.

Correct me if i'm wrong guys, what's your thoughts about this?

Nothing is 100% secure but the right offshore host can have a little protection depending on what you are doing.
If your business requires you to hide then you should either pay what ever the cost or consider changing your business.

If you use a normal host and post copyrighted material or the hosts gets complaints then they can take your site down.
The point of using a bulletproof offshore host is that they will (depending on the host) ignore any complaints and your site will stay up.
