Namecheap is good when your mailing is low. If your company is growing every day and mailing needs too then do emailing on your domain via any CMS + roundcube

As I'm an independent and offer decently priced services, I don't see myself sending/receiving more than 100 emails a month.

Zoho is just as good as gmail (even the UX is pretty similar). I use them both (Zoho on domain and gmail on @gmail.com address). I will be using a completely new domain for the email and documents server. I want to see what it takes to build one. From the tutorials, it seems to be pretty straight forward. You just install the server on a new machine, and set proper spf,dkim records. It handles everything else by itself. It could not better if this is that easy to configure.
Hopefully it doesn't take you long.
That's why I'm not too happy with the idea of going out and building it myself.

This seem more as email integration software and not necessarily tools to add "your domain" after the @ which is the kind of service I'm looking for.

If you need IMAP/SMTP support it’s not for you. If you want privacy and security, yes. They cannot read your emails.

We are using self hosted mail server. And I believe it's a must.
Even without outstanding skills you can set up your own server. Maybe take a look at iRedMail, it's free. There are paid solutions also.
A server would be like hosting? I'm a complete ignorant in email terms.
If it's the "hosting", would I need to get the "domain" or "@yourdomain.com" from another company?
