Please can someone recommend the appropriate course I can learn to be able to draw this graphic.

From what I can see. This looks like simple Cartoon Infographics. I personally wouldn't spend money on a course. Instead, head over to Youtube and find someone who does "How-To's" in the exact art style you want.

The tool used to draw something like that?
You can do that with ms paint or any drawing tool available on the market.
What you need to understand is how the proportions of human anatomy are visualized.
Youtube is your friend
