Which structure should be opted -

Home » Services » Service Name
or

Home » Service Name

P.S - I have a common services page that mentions all the service that my client offers and then link to their individual pages.

What do you mean by optimizing them? Can you please brief.
I meant having content on both pages (Services, and Service Name) and optimizing that content. You'll basically have content pages and content pages rank when they're properly optimized (image ALT tag, LSI keywords / SEO entities, addressing the keyword's intent, internal links, etc). I meant that both configurations could work if the pages have content that's SEO optimized

Home » Services » Service Name. This one good for user experience. With single click user can find all the service you provide.

Make sure you perfectly optimize the title and meta tag for search results.
 
it usually looks something like this

Home > Services > [Category] > [Subcategory] > [Service Page].
