What pages are important to Google?

I have an adsense website. I've been mulling over whether google favours a website which has all or any of the following pages:

• Contact us
• About us
• Privacy Policy

Do you guys think Google gives more trust to a website that has these specific pages?

You could add "terms and conditions" to that list.

I personally believe that they do give a little boost to sites with those pages - the adwords quality guidelines are probably a good guide to follow for your spam sites.

Yes as Autumn says Terms and Conditions, as I operate in a field where I get a lot of freebies such as free products for review I also have an Ethics page, that basically says Yes I accept freebies from companies however recieving these freebies does not influence my review of the product or service.
