as you've said it yourself, most niches are competitive, so there's isn't a specific niche that we can recommend. And equally important, most of the informational keywords (which used to be the easiest to get traffic for) are answered by google's AI with the content that they steal from you, so focusing on niche with informational keywords doesn't seem like a good strategy anymore IMO...
So, you need to find niches that are not very competitive, but which also have keywords that the AI can't answer (at least not yet), such as comparison / review-related keywords, personal experiences, etc..
Wish I could give you a few examples of good niches (or at least industries) to look at, but I've been out of the game for years so I wouldn't know what to say. But start with the above tips, and with a bit of research I'm pretty sure you can find your own niche(s)

Pick a niche you understand, then go micro.
Instead of broad topics, focus on very specific angles others ignore.

In my opinion, you should choose a field that isn't overly competitive but still has keywords that AI is less likely to answer, and then delve into the smallest details. Don't pursue overly broad topics; instead, focus on specific tools and aspects, even those that most people haven't thought of. These "specialized areas" are where the competition is lowest and it's easiest to gain an advantage.

Instead of going for main niches, you can target sub-niches. Like; Gardening, Kitchen care, Save money on travel, Daily finance etc.
While selecting a niche, its important that it comes under your interest and bit of expertise (which you can gain through research). Without that the motivation will vanish after few weeks or months.

Rather than a niche "without competition," I would look for a niche with low competition within a very specific sub-niche. Today, I believe it works best to specialize highly (for example, not in economics or money, but in something very specific, like gold, gold trading, mining, etc.). It also helps to choose something where you can contribute real-world experience, things that many people don't know. With a little research, we can obtain information on almost anything, and if we have personal experience, even better. The key isn't avoiding competition, but finding an angle where you can excel.

I think instead of chasing a “low competition” niche, it’s better to go a bit specific within something you actually understand. In my experience, micro-niches like focusing on a problem or audience work better than broad topics. You can start small, see what gets traction, and then expand slowly. Most niches feel competitive, but there’s always room if your content is helpful and consistent.

Tech and AI are good niches. However, you'd have to have technical knowledge and/or acquire it in some way in order to blog more effectively on these topics.

I think niches feel crowded only when you go too broad. In my experience , it is easier to pick something specific you actually enjoy and then narrow it down even more , like a sub-topic or a certain audience. I would start with what you already know or are learning and build from there. It might not be perfect , but it is easier to grow when you are genuinely interested.
