Does it make a difference that in the email they made a few spelling errors like they used the word "to" instead of "too". Not very professional right?

If you are living in another country then the probability of lawsuit is almost zero. Also if your hosting is in different country where you live it's even less. These kind of lawsuits are very complex (and costly) and there are probably no damages to claim for the lady for using her amateur pics. So I think you can just forget the whole thing.
And.. If the letter is not from lawyer who requires you to answer something don't answer to that lady. Your letters for her can be used as evidence later if she actually decides to sue. Just remove the pics and keep quiet and she will probably be happy that her images are removed (if it's actually her and not a competitor)

No not at all, it is their work and they hold the rights to it.
Just pay for some royalty free images.
Or use public domain/cc images. There are plenty of those available for free.
