The credit card processing company I use has an online "console" for you to process a payment manually for the client but if they don't know you, that might scare them. I meet most of my offline clients in person and collect a check, but I have processed payments over the phone often (usually for repeat customers).

If it's a local client, meet with them in person to collect information. Seeing their body language helps me determine the kind of person I'm dealing with. As much as I would like to deal with all clients in a similar fashion, it just doesn't happen. The better I know and understand them, the easier I'm able to figure out what they want and how to please them (for recurring/future business). If it isn't possible for you to meet with them in person, set an appointment to chat with them again on the phone. If they're excited enough to pay you immediately over the phone, you probably wouldn't even need to do that. They would probably deal with all of that immediately.
