White hat is everything google recommends black hat is performing multiple acts in order to purposely manipulate the search results. Its like trading in a sense, you have low risk stock which will make you money over a long period of time and is extremely low risk or you have crypto which could make you rich overnight but also the more likely risk of it going to zero overnight.
From my experience and those I know their isn't really anyone who does one or the other. I would find a balance between the two also known as grey hat.
