None really.
Labeling just makes people feel better about themselves.
Major difference is in how you acquire backlinks.
BlackHat is more about control and speed where you usually work with properties you have access to or don't need to wait for approval.
WhiteHat is slower as you work with 3rd parties.
True WhiteHat is when you acquire links without you taking any part in it. This is extremely rare.
Even people calling themselves "WhiteHats" break webmaster guidelines.

White had methods are the baby steps we all take in the beginning. When the baby steps don't work well, we grow up and start following black hat methods which, after all help us reach some goals.

Yup. In white hat you basically follow the rules and the gurus, and let Google get the pace for getting people and links to your site.
In black hat you chuck or game the rules, and create your own pace for building traffic and links, without waiting for Google to get around to it.

Blackhat SEO - it refers to off page optimization doing in an unethical way and generating back links to the target website. Basically violating the Search engine guidelines. To produce result in short term.
Whitehat SEO - It refers to On Page Optimization doing in an ethical way by following the guidelines. It takes longer time to produce the results.

Technically white hat seo should just be on page optimisation and content creation as link building is not white hat.
however, my personal interpretation is to consider seo as a spectrum - at one end you have super aggressive link building for example large scale pbns, using tools such as gsa to build large volumes of backlinks - basically the epitome of what google are trying to prevent And at the other end you have super high quality link building such as reaching out to webmasters for genuine content promotion. The former is black hat seo and the later is white hat seo.

Well, in cases it's the other way around where lazy people compensate shitty content and sites by buying more links.

I find these terms bullshit in SEO. I don’t find myself blackhat because I’m buying links, building PBNs, etc. I find blackhat those guys who build blogs with 100k+ duplicate articles and rank for 1m+ organic keywords. Lot’s of if not all SEO agencies claim they use only whitehat methods but we all know it’s not true.

The line between the two is blurred. Today, the term “Black Hat” usually refers to creating or buying what you would have otherwise gotten naturally via “White Hat” tactics. Given that almost everyone buys or exchanges backlinks these days, I’d say that both terms have grown somewhat obsolete. That doesn’t stop us from using them, however, as they do have a nice ring to them.
So, in essence:
Black Hat: using whatever you can to win the game
White Hat: Playing the game normally.

Well the black hat SEO users are those who basically uses different types of tips and tricks to manipulate and get a better ranking of the website and make it to start earn in a short span of time. Whereas, the white hat seo users are those who lets their website grow on their own and brings the links and improves the ranking naturally. In other words the black hat seo uses steroids and the white hat seo grows naturally by working hard.
