What is best-doing new e-commerce with same content?

Hi folks!Been using the forum and found it very helpful!I have a serious doubt:
Need to move my eshop (the older one is 20 years yet and built on ancient PHP 3.x, so it's really time to exchange it).I must move to new a domain(+ new platform), NOT WooCommerce!
I am not SEO guy, but things are not so complicated (sorry, don't want to be rude),so could anyone give me proper advice!
The fact-will keep my older eshop so far(with very good ranking) !
My thoughts:
Will try to exchange a bit the structure of website; will exchange slightly the names of categories; will amend H1, H2 and rewrite as possible on different way the description of the products; will give a Google robots.txt file; rewriting the alt tags of pictures; canonical URL.
So,my question is-generally I have an idea how to proceed,but never did it,so I am I bit scared!Is this will be fine above?
The last clarification: my niche is tight,so I am not sure how far I can get to rewrite the content,but will try my best.And-YES, I really need to move my shop,it's not just about that very old system I am using!
Any help will be much appreciated!

Switching to a new online store can go well if you keep your old site’s good SEO parts and slowly make small changes to the design and text.

Hi and thanks,but can't get the point - where need to do small changes on design and text?(Old shop don't need to be touched,the new one is not built yet)?Have you ever done similar case? Thanks

Your plan covers the key steps but make sure to set up proper 301 redirects from old URLs to the new site to preserve SEO and minimize traffic loss
 
The best option is to rebrand and relaunch your e-commerce store, keep the same content but with a new name, design, and marketing strategy to attract fresh customers.
