Good content is the one that...
- Fully satisfy the user´s search intent - Whether it is informational, commercial or transactional.
- It´s appealing to the eye and reader-friendly - For this, you should focus on, not only the content readability levels/scores (Research about the Flesch-Kincaid readability score) but also in the graphic elements presents in the body (Videos, bullet points, infographics, customized images, etc.), anything that breaks the big wall of texts and make the reading more engaging.
- It´s fully optimized for SEO - For this, there are plenty of free resources on the internet and some amazing threads here on BHW. SEARCH FOR THEM!

Great content depends greatly on the person reading it. You want to know what great content is to your target audience? Be them for a while. Search similar terms and questions. Find sites that are popular in that niche and improve their content.
Find FAQs based around your target audience, and write articled based on that. I see many questions that have not been answered on a website, and only on forums. Revolving an article around those questions, in a way that the audience appreciates, is great content.

doing exactly the opposite is surely the best way? For example, I would love to get into graphic design. I am crap at it. But I dont want to watch crap that means nothing while I am following it.

do it. I will be your first sub. IF you do it on a platform I dont need to spend shit loads of money to buy, like photoshop
For most of designs you can use Canva or buy one-time Affinity for a much cheaper price than Photoshop subscription.
The problem is they are very few people who wants to watch it. Everyone else wants entertainment. And i do not know what entertainment I could create.

have you looked into competition? Both on Google and YouTube? Maybe a website with embedded youtube videos? I dont know, man. One thing I can say, is try.
I have looked, a lot of competition, low volume. On Google is easier, but it still takes 6-12 months probably to do something

Maybe I will try with JR VIP, but i must think of services. I would like to serve Webflow and Wordpress designs
