White hat is basically doing everything by the book - following the rules which includes on page seo, following google webmaster guidelines, building genuine backlinks etc

Blackhat is breaking the rules to exploit google etc and gain higher rankings, includes buying links, posting links for or purposes, manipulating pagerank etc.

Redhat is just a thing that keeps the sun off your head.
