hello there, what happens if you get certain post, delete the video and replace with a new one and also change the post image to fit the video, how search engines deal with that change?

I would say probably like when you update a blog post; it would show the new content.

Yes it can change. If you upload a video about cats and then change it to a video about cars, yeah your ranks will change. Google knows what the videos are about and the rankings will fluctuate one way or another

It depends on how much changes you're doing to the content as a whole.
I've noticed that for my posts that get the number one spot, any change that I make will have an impact on its rankings.
Of course, it depends on how "big" the change is.
For instance, a lot of people report that if they add AdSense to their site, sometimes this results in a temporary decrease in traffic.
Now, "temporary" is relative.
This can last weeks if not months or, in the case of very big sites, not more than a few days.
But keep in mind that when you make changes to your posts, there usually is some change in the rankings.
But ultimately if it's fairly minor, you'll get back to where you were.
If you try to improve your content, you might end up with a higher ranking.
