If is personal, notepad, sticky notes, if is professional Trello is a nice alternative.

Obsidian is my favorite by far, If you need cross device synchronization you need to do it on your own (syncthing/jnextcloud) or pay. Unfortunately it isn't open-source, but it's definitely better for privacy than Google Docs.
