Just use Camtasia 8 or 9 [it's easy to find free versions], very simple to use if Sony Vegas or Premiere is too much...

OBS Project, if you need to record.
 
I use Shotcut, opensource, easy to use.
Gets things done.
 
Davinci resolve or Filmora.

Have been using Filmora only for normal edits here and there.
 
For pc I would suggest you Adobe premiere pro and final cut.
 
I would say Filmora, its really easy to use the only problem is that is paid but its such an easy software that allows you to do pretty much everything
