Surprised no one has mentioned this yet. Definitely going to take a hit on performance but totally worth it.
Its the first thing I install on my WP sites.

It depends upon your theme, but caching plugins and seo optimizers should be what you must have.

It really depends upon your site and what's required.
I use WPCache and All-in-one SEO but besides that it depends on what you want to achieve using your site that decides which plugins to install. There's no default list otherwise.

If you generate content, try Twinword Writer plugin. You can get automatic topic and tag suggestions. Also in case you forgot what word to use, it gives you synonyms suggestions right in your Editor.
