Hello guys, what affiliate program would you recommend if i want to promote any niche product via cold email? Maybe amazon affiliate is best? I want to promote anything , from dog accessories to cooking accessories and etc. Basically anything. So would you recommend amazon associates?

Amazon affiliates will not let you put their links in emails. In fact, many affiliate programs don't let you do that, and they won't count a click/conversion if it comes from email, or worse, they'll ban your account. Some affiliate programs will let you do it if you get permission from that brand's affiliate manager first (I successfully did that for 1 brand I wanted to feature in my email newsletter to my mailing list).
So for email, you probably need to find an affiliate program OR ad program that's targeted toward owners of mailing lists, or else look at affiliate programs you're interested in one by one to see if their TOS allow you to put links in emails.

A cold email is an unsolicited e-mail that is sent to a receiver without prior contact and without appropriate prior consent of the receipt of the email.
I am not aware of any affiliate marketing network that allows cold emailing to promote their offers. If anyone knows, please do inform OP about the same.

I see lots of videos on youtube about cold email+ affiliate and on video they show they use clickbank, digitstore24, nutraprofits.. Saw these.

Better not to believe all or every YouTube video please. There also lots of YouTube videos many streaming live, about doubling, trilpling your crypto (Bitcoin, etc). Please DO NOT believe those.
Something may be on some videos on YouTube, but that alone does not qualify for the thing to be accurate, correct or legitimate.
One must nowadays do one's own research and analysis.
