Tell them to add a new email. Log out, leave the acc rest for 7 days and try to remove the original email again

can't let them change any info because it sends the code to the original email

it sends the code to the original mail, not to the mail connected on the account...
Eg. the original mail is [email protected] and if you go on settings the email connected to the account is [email protected]
If you try to edit some informations on the account it sends the email to [email protected] (and that mail can also be lost or owned by previous sellers...)

Yeah because Instagram has a cooldown phase when you login to a new device. Incase the account gets hacked it gives you time to recover it by imposing blocks on the new login users. I think the block can last upto 14 days. It's advised not to change anything during that time, if they force and retry it it can just reset that timer. Happened to me too

It's best to sell the original email account along with the ig account and disconnect any phone numbers beforehand. Then the buyer can deal with it themselves.

You should wait a couple of days before trying to change the email because instagram has a cooldown period.

Its best that whenever you sell account you also sell OG Email with it, this way you face less problems overall.

Seems like that's how it usually goes now. You'll have to bundle it up with the OG email as much as possible. Or have the new user file an appeal with IG or Meta to have the updated email get the verifications. You might need to coordinate with the new user about this though since it's gonna be some back and forth about account details, I imagine.
Why didn't you sell the original email accounts to them?
