When you create a site it will use google.com as the default searchegine to rank in?

Is this good or should you point your pages to local google sites, of course a spanish site should be pointed to google.es but is that the case for american/english sites to?

Is it easier to rank on google.us/google.uk then on google.com ?

it wont use google.com as default to rank in.

It is all to do with what each individual spider thinks is worthy of being in which of googles search engines.

You can also manually request it to be added to which ever ones you want also.

But dont think that it will rank in .com by default just because thats where majority end up

First of all, you should think about your target visitors. They are regional, country specific or global. After this, you should think about search engines on the basis of your target visitors.
